Leek and Mashed Potato Soup

This is great for leftover mashed potatoes! This soup is DELICIOUS! It is adapted from a Real Simple recipe.

3 leeks, cut up
1 fennel bulb, cut up
3 cups mashed potatoes
6 cups stock

In a large pot, bring all ingredients and any desired spices to a simmer until the leek pieces are soft. Carefully transfer to blender and blend until smooth.

Carrots could be good in this, as well.
When I make mashed potatoes, I always make them garlicky and doctored up. Doctored mashed potatoes work great. If you don’t do that, perhaps add some garlic for better flavor.

Turkey Meatballs

The following is a recipe adapted from Cooking Light. These are great to take to a party. They also make for an easy, fun dinner. Try marinara for dipping! I usually double the recipe.

1 lb ground turkey
1/2 cup low fat ricotta cheese
1/2 cup bread crumbs (i think oatmeal could be fine, too)
1 egg (I usually use egg beaters)
1/4 cup cut up fresh herbs (parsley, basil, or cilantro)
salt, pepper

Mix all the ingredients together in a large bowl. Roll into small balls and brown in frying pan with cooking spray or oil. After browning, bake for 15 minutes at 350 degrees.
