Chicken and Dumplings

cooking spray
16 oz. chx
1.5 cup celery, chopped
1 cup carrot, chopped
1 cup chopped onion
thyme, parsley, bay leaf,
6 cups fat-free, low sodium chicken broth
bisquick biscuits

heat large saucepan over medium heat. coat with cooking spray, add chicken, brown on all sides. Remove chicken and add all other ingredients except broth. saute until tender. Add broth and bring to a boil. Simmer 30 minutes. Make bisquick biscuits recipe and add mixture to pan, cover and let cook 10ish minutes until dumplings are done.
