Delicious Hummus

The basic recipe for this comes out of Cooks Illustrated. It is SO creamy and delicious.

3 tb lemon juice
1/4 cup water
6 tb tahini (I like Krinos brand)
2 tb olive oil
1 can chickpeas aka garbanzo beans
1 garlic clove, minced
1/2 tsp table salt
1/4 tsp ground cumin
pinch cayenne
cilantro or parsley as garnish. I also put a little paprika on the top for color.

Combine lemon juice and water in a bowl. Whisk together tahini and 2 tb oil in a second bowl. Process in food processor or blender the rest of the ingredients until almost fully ground. You might need a little extra liquid if using a blender. Scrape down the bowl and add lemon juice/water and then add tahini/oil. Blend until smooth and creamy.

I double the recipe to great results.
Also try these variations: 1 cup artichoke hearts, 1 can black beans in a double batch in place of chickpeas, roasted garlic, red peppers, etc. SO GOOD!
