canned petite tomatoes (i think it makes sense to spend a bit here, i’ve noticed cheaper brands sometimes don’t do the job here)
mix 3-4 cans with chopped green onions, lots of minced garlic, and lots of cilantro.
add hot sauce depending on your tastes.

Other upgrades: corn (freezer or canned), black beans, mango chunks, etc.

You can use salsa to dip chips into, carrots, jicama. You can pan saute it and throw it on pasta, or you can serve it on top of chicken or fish hot off the grill! 🙂

Tator Tot Casserole (updated)

2 Lbs hamburger (lean!)
an onion
crushed or minced garlic
2 cans cream of mushroom soup (whole foods has a great organic version)
mixed veggies (I use frozen mixed)
tots

Stir fry hamburger with garlic, onion, and whatever other seasonings you like. put in the bottom of a large baking pan (like a lasagna pan), spread as many veggies on top as you like, throw on the cans of cream of mushroom, then layer tots on the top. Bake for an hour at 350 Fahrenheit. So good!
