Zucchini Alfredo

Thinly slice 3 summer squash and 3 zucchini (use mandoline if possible, if not, just v. thin slices).

Either make an alfredo sauce or use a jarred sauce to top the veg. Heat in a pan. It *almost* feels like you’re eating fettucini alfredo!

Serve with roasted chicken if you like meat for a satisfying dinner.



Tex-Mex Quinoa

1 cup quinoa
1 cup water/1 cup chicken stock
Cook like rice, adding chosen spices (cumin, garlic, red pepper, etc)

Once the quinoa is nearly cooked, add in a can of tomatoes and a can of beans (white kidney, navy, or black beans)

Great side for fish or chicken. Quinoa is v. healthy and satisfying! Give it a try.
