Green Bean Ceasar

This is my parents’ recipe, and something that I have to have every year on Thanksgiving and Christmas!

2 cans green beans (boil first if using fresh)
2T olive oil
1T balsamic vinegar
1T or more of dried instant onions
crushed garlic to personal taste
salt and pepper/lawry’s to taste
handful of ground saltine cracker
2T parmesan cheese
2T plus or minus butter
Paprika

Preheat oven to 350. Toss beans with oil, vinegar, onion, garlic, and seasonings. Pour into ungreased qt casserole. Stir together crackers and cheese and sprinkle over means. Place small daps of butter over crackers and sprinkle paprika. Bake uncovered till heated thoroughly (about 45 minutes). You can vary amounts of ingredients to equally satisfying results. This recipe can easily be doubled. I find this to be a crowd pleaser (as opposed to the cream of mushroom bean dish).



Gma’s Cheesy Potatoes

CHEESY POTATOES

1 pkg shredded potatoes (can use those with peppers and onions in if you wish)
1 8 oz. carton sour cream
1 can cream of mushroom soup (can use cream of chicken or cream of mushroom chicken or even cream of celery)
1/2 stick of melted margarine
1 c. shredded cheese ( I use colby jack )
garlic salt
salt and pepper
if you don’t use potatoes with onions in them add some onion. If they seem dry add a little milk.
I sprinkle cheese on top about 1/2 way thru baking.
Bake at 350 for 1 hr. depending on your oven. You can sprinkle crushed cornflakes on top . That always adds a nice crunch.
