Liz’s Chinese Cabbage Salad

I think Liz got this off the internet. It is delicious!

16 oz. pack coleslaw shopping list
3 oz ramen noodles, crushed and toasted
10 oz cashews/sesame seeds, toasted
1 bunch scallions
1/2 cup sugar
1/2 cup oil
1/4 cup cider vinegar
1 tblsp soy sauce

mix together all salad ingredients
in a seperate bowl blend well the dressing ingredients
pour dressing over salad when ready to serve.

Avocado-Lime Black Beans

From The Kitchn

One 15-ounce can black beans
1/2 lime, juiced
1/2 cup fresh cilantro leaves, chopped
1 small shallot, diced
1 teaspoon ground cumin
Salt and freshly ground black pepper
1 avocado, to serve
Drain the beans thoroughly. Toss with the lime juice, cilantro leaves, diced shallot, and ground cumin. Season to taste with salt and black pepper. Peel and slice an avocado, and serve the beans at room temperature, with 1/2 avocado on top of each serving.
The beans will last for several days in the fridge. You can take a helping of beans in your lunchbox, along with sliced avocado that has been tightly wrapped to protect against browning.

Thai Chicken Rice Soup

I had this at a restaurant and loved it! Not sure of the measurements, but here are ingredients:

Broth with lemongrass, ginger, and pepper.
shredded white chicken
green onions on the top when served.

Horseradish-crusted (fish of your choice)

Place skinless fish fillets on a baking sheet. Season with salt/pepper. Sprinkle with bread crumbs and 1 tablespoon each of prepared horseradish, olive oil, and parsley. Roast at 400 until opaque.
