Apple Chia Jam

Adapted from Oh She Glows! I ate this plain and also served over overnight oats. Loved it! Any fruit should work. 

  • 6 large apples, peeled and diced
  • 1.5 cups 100% pure apple juice
  • 4 tablespoons chia seeds
  • 2 teaspoons cinnamon or other spices 
  • 1 teaspoon pure vanilla extract (optional)
