Butternut Squash Soup

I wanted a healthy, vitamin a providing, tasty soup.  What follows is a conglomeration of several recipes:

1 onion

3ish cloves garlic

1 tb olive oil

1 med butternut squash, cut up

handful of cut up carrots

4 cups broth (low sodium please!)

1 cup buttermilk

half cup cooking wine

nutmeg, salt, pepper to taste

fresh cilantro as garnish

saute onion, garlic, olive oil until tender.  add in butternut squash and carrots, then pour in liquids and add spices.  Bring to a low boil for about 20 minutes, until ingredients are tender.  transfer to blender and blend until smooth.  throw in garnish when you serve.

I think this would freeze well and is a great accompaniment to any meal.
