These are a good dessert for a dinner party. Growing up, we had them on Easter and served berries over the top. I have seen recipes that do berries and lemon curd on top. I want to try that sometime.

4 large egg whites, (about 1/2 cup), at room temperature
3/4 cup granulated sugar
1/4 teaspoon cream of tartar (optional, but will result in greater volume)
touch of almond OR vanilla flavoring
food coloring of you choice (optional, but cheerful).

In a NON-PLASTIC BOWL (bowl for a kitchen aid mixer is a great one to use), start beating eggs, then add the other ingredients and beat forever, until it forms stiff peaks and you can beat no more.

Then place dollops on a tray and bake at 200 degrees for about an hour. They will no longer be shiny when done cooking. Do not use olive oil flavored cooking spray! It ruined a batch I tried!
