Red Curry Sauce

2 Tb vegetable oil
1/4 red onion, chopped
2 tsp chopped garlic,
2 tsp chipped ginger (do not peel)
1 tsp minced jalapeno
1 Tb yellow curry paste
1 cup coconut milk
1/2 cup water
1/4 cup corn syrup
juice of 1 orange
1 teaspoon Sriracha
1/2 tsp cayenne pepper
1/4 tsp turmeric
juice of 1 lime
salt and ground pepper to taste
2 kaffir lime leaves (fresh or frozen)

In a saucepan, heat hte oil over high heat. Add onion, garlic, ginger, jalapeno. Saute the mixture until it is slightly caramelized (4ish minutes). Add curry paste and cook for 2 minutes. Add coconut milk, water, corn syrup and orange juice and simmer for 8-10 minutes. Add Sriracha, cayenne, turmeric and simmer for 5 minutes. IN a blender, puree sauce with lime juice. Season to taste. Add kaffir lime leaves to the sauce and refrigerate. Discard leaves before serving.
